Quinoa & Kale Salad with Chia & Pumpkin Seeds


1 cup quinoa, cooked (still warm)
1 cup kale, sliced
1 red pepper, diced
1 cup red cabbage, sliced
2 carrots, shredded
1/2 cucumber, diced
1/2 cup pumpkin seeds
2 tablespoons chia
2 tablespoons parsley, chopped
2 tablespoons chives, chopped
1/3 cup white wine vinaigrette


Put all of the ingredients into a large bowl and toss with white wine vinaigrette.

White Wine Vinaigrette


2 tablespoons olive oil
1/2 lemon, juiced
1 tablespoon white wine vinegar
1 tablespoon honey
1 tablespoon dijon mustard
salt & pepper to taste


Put all ingredients into a mason jar.  Screw on the lid, shake and pour over salad.
