Moroccan Sweet Potatoes with Ginger


1 large sweet potato, diced
1" fresh ginger, finely chopped
2 tablespoons honey
1/4 teaspoon cumin
1/4 teaspoon chili powder
1/4 teaspoon turmeric
cayenne pepper to taste
fresh ground pepper to taste


In a saucepan place diced sweet potato.  Fill with water until just below the tops of the sweet potato cubes.  Bring to a boil.

Reduce heat to simmer.

Add ginger, honey, cumin, chili powder, turmeric, cayenne and pepper.  Allow to reduce, about 10 minutes.
